Classes available up to 1 day and are great for students, professional chefs or keen cooks looking to improve their skills and knowledge.

Paul Gayler, A Masterclass with Cheese

What is it:  Paul will be accompanied by his specialist cheese supplier Simon, who will give a short thought provoking and insightful look into cheese courses and boards- taste and comment on styles and combinations.  Demonstrations of a number of dishes with many varieties and flavours.
When: 10th September 2010

Who it’s for: People with a specific interest in cheese- Paul is a prolific author and has also written specialist books on cheese. This is certainly not to be missed if a cheese fan!

John Williams, Menu Sonata, a Tasting Menu from The Ritz

What is it: A menu packed with refined dishes that feature on the tasting menus of The Ritz Hotel’s world famous award winning restaurant, with the Executive Chef, John Williams.
When: 12th October 2010
Where: Café Spice, 16 Prescott Street, London, E1 8AZ
How long: 3 hours
Who it’s for: Anyone that wishes to experience detailed and refined cooking at it's best and to gain a flavour reference.

  • Warm Oyster with cucumber tagliatelle and caviar
  • Butter poached Lobster with ginger and cauliflower cream puree
  • Fillet of Turbot with baby leeks and morels
  • Cutlet of Venison with forestiere garniture

Cyrus Todiwala, A Parsee Masterclass, The Zoroastrian Cuisine of India 

What is it:  Cyrus will provide some historical background and relevance to the dishes, try and finish a Dhaansaak as to make one takes nigh over eight hours and some seafood dishes as well as his own childhood favourites.
When: 12th November 2010

How long: 3 hours
Who it’s for: For those that have an interest in the cuisine, its culture, its influences, its customs and provide a general over view which will help attendees to understand the actual difference between truly Indian and British Indian names of dishes.

Established in 1965 as a Guild of the Cookery and Food Association, the Craft Guild of Chefs is the leading “open to all” Chefs’ Association in the UK and has many members worldwide.

The Academy of Culinary Arts

Founded in 1980, the Academy of Culinary Arts is Britain’s leading professional association of Head Chefs, Pastry Chefs, Restaurant Managers and suppliers.

While concerned with raising standards and awareness of food, food provenance, cooking and service, its objectives are equally focused on the new generation of young industry people through its education and training programmes and the provision of career opportunities.

Membership

The Academy of Culinary Arts is recognised as one of the industry’s leading voices. Its status and influence as a significant working association is underpinned by the success of its numerous activities and education initiatives. Members are therefore expected to invest their time and energy in the Academy’s various activities.

Since its inauguration, membership has grown to over 300 over the most notable Head Chefs, Head Pastry Chefs, Restaurant Managers, Sommeliers and suppliers.

Academecians

Entry Requirements
Applicants for membership should:

  1. Be a minimum of 28 years old.
  2. Have spent a minimum of 3 years in the same position as Head Chef, Head Pastry Chef, Restaurant Manager or Sommelier.
  3. State in a letter accompanying their completed application form their reasons for wishing to join The Academy and what they are prepared to offer.
  4. Cite 3 existing Academicians as referees, preferably with whom they have worked.
  5. Submit with their application form  their curriculum vitae and photocopies of any relevant certificates and qualifications
  6. Upon acceptance, pay an entry fee of £100 and thereafter an annual subscription of £100 (plus VAT)

Subject to the above and meeting the criteria for membership of the Academy applicants will be invited to attend an interview with the Selection Committee. The Committee’s decision is final and no further correspondence will be entered into.
