Young Chef Academy
What it is: An excellent 10 week program, typically running on Saturday mornings by professional chef lecturers offering young enthusiasts aged 11-16 a fantastic opportunity to learn at college and gain confidence and skills.

Learn how to prepare and cook the recipes for:
- Pizza
- Chelsea Buns
- Cream Horns
- Spicy Roast Chicken
- Victoria Sandwich with Butter cream icing
- Fresh Pasta
- Risotto
- Chicken Pie

In the final week students prepare a three course meal for family and friends to celebrate their Graduation with a celebrity chef.
Typical Program Content:
- How to work safely and hygienically following the health and safety rules that apply to a kitchen environment
- What constitutes hazards within a kitchen
- Knife skills and safety rules
- Personal Hygiene and protective clothing standards
- Using basic Kitchen equipment safely and appropriately
- Dietary and nutritional awareness for those who may have special dietary requirements
- Identify the 5 main food groups
FutureChef

Want to be a top chef in the future?
Then Future Chef is the competition for you. But this is so much more than a competition – entrants are assigned chef mentors who will help to develop you throughout your chef journey all the way to the final.
Last year there were over 7,000 entrants from 600 schools, so there’s lots of cooking to be done and with the final judged by some of the very best chefs in the industry you want it to be good.
Last year Brian Turner and Ainsley Harriott declared Luke Thomas Future Chef 2009 – he now has a promising future as a chef, assured by the industry leaders and super chefs who were involved.

The 2010 Program:
Stage 1
School heats: June-October 2009
Students are challenged to prepare a hot dish with a 1 hour time limit and just £4 to spend on ingredients. The winner at the school stage goes on to represent their school at the Local Final stage. All judging is carried out by the school themselves.
Stage 2
Local Finals: November – December 2009
The school heat champions must serve up a main course and a dessert for 2 with a budget of just £6. The winner then goes on to flex their culinary muscle at the Regional Finals where they will get expert training from an industry chef. Springboard host the Local Finals and the competition is judged by industry chefs.
Stage 3
Regional Finals: January-February 2010
In the Regional Finals the budding chefs get to put their newfound skills and professional training to the test by preparing a main course and dessert for two with a bigger budget of £8. The Regional Finals are hosted by Springboard and the prize is a place in the National Finals.
Stage 4
The National Final: March 2010
The 12 winners from the Regional Finals go head to head and the FutureChef National Final in London. Chefs must prepare a two course meal using ingredients provided and to a 90 minute time limit.
The event is hosted by Wesminster Kingsway College and is judged by high profile and celebrity chefs.
