“Mummy's Boy

Paul Gayler's Inspirational Journey

Career Path: Family Catering Business > Catering School > Head Chef > Executive Chef

“Your never too young to start in hospitality. I began as a boy, helping my mother with the family-run catering business."

My Story: My love of food and cooking began when I was a boy, helping out my mother with the family-run catering business. By the age of 16 I was attending a local catering school where I excelled. I went on to use these skills in some of the best kitchens in Britain as well as France. I was then appointed as head chef. Frustrated by the lack of vegetarian option, it was here that I pioneered “Vegetarian Haute Cuisine”. I created a spectacular seven course gourmet vegetarian menu. I am now heading up the team at The Lanesborough.

Funny Story:
While Competing in culinary competitions around Britain, I once saw one competitor, removing his entry for display from the back of a National Express coach, from another part of the country. As you can imagine it didn’t look too good after the long journey, and being thrown around in the coach! I consolled him with a drink, it was funny in hindsight but I did feel sorry for him.
